Aaaahhhhh!

Saturday was by far the best weather that Western Oregon has seen in 2011! Granted, the standards are low. This has been an exceptionally cold, rainy winter and spring and we recently went for something like 43 days in a row without a clear day. But this day was perfect. Upper 60s, not a cloud in the sky. No wind.

We went into Portland early for our third of four Birthing From Within classes, with plans to walk around the neighborhood and enjoy the sunshine. We didn't know that there would be an Earth Day festival that would be taking up the entire playing field area of the former school that is across from our birth center's meeting space. We wandered around the ring of booths and enjoyed the two stages of live music, and we even ran into a friend, Sarah, who was on a date with Bryn, her sweet son. It was the perfect place to sit down and eat our picnic lunch!

Our instructor was running late, so we decided to pop on over to Sweetpea, the best vegan bakery ever, which is conveniently located three doors down from our birth center's meeting space. This peanut buttery treat was sooo delicious!

After our class, we headed to another vegan establishment, Papa G's, to get some work done. But first....curry tofu and veggies with greens and sweet potato mash...and some vegan chili nachos.

Again we felt the need to follow a day of vegan eating with some rich dairy item and stopped on the way home for fresh strawberry sundaes at Burgerville. Two desserts make for an indulgent day, I know, but we'd been saving our wallets and our bellies for this all week! And it was worth it! The next day, Easter Sunday, was cold and rainy, but we certainly got the most out of that short stint of gorgeous weather! And I'm confident that it will be back soon.
